The Alva Forest Carbon Steel Wok with Wooden Handle 12 Inch is a 12-inch wok, made from nitrided carbon steel with a shaped wooden handle. It works on gas, electric, ceramic, halogen and induction cooktops. Carbon steel takes high heat and holds it, so it sears rather than steams. Built for stovetop and high-heat cooking rather than the oven, as the handle is wooden. It is uncoated, so there is nothing with intentionally added PFAS, PTFE or PFOA. Get it smoking hot, cook in small batches and keep everything moving so it fries rather than steams. Covered by an Alva 10-year limited warranty.
